I have seen the rear seats go in but I believe they are not anchored all that well. Fronts drop straight in as per Vauxhall usual.
17s will be fine with rolled arches if you use the correct ET49 offset as it's not the (overall) diameter that causes problems it's the width and offset.
my convertible is lowered 35mm with 17" wolfrace wheels that have a 45mm offset iirc. i had the arches rolled and they only rub with people inthe back, and that is just the inner arch.
On a similar note I have 195/50/15 tyres on my GTE, bootful of heavy tools and a mate in the back and the arch 'lip' has caught/rubbed the outside tyre sidewall on both rear tyres..
Have you tried loading the boot up and looking at the gap between the tyre and lip? There should be no problem with 195 tyres on 6 inch wheels on standard offset. It's possible there's some rear beam movement under dynamic conditions.
